A Summer Sizzler! Seared turmeric chicken and spicy chickpea salad.

This delicious little salad supper literally took me 10 minutes to make. A proper summer sizzler, it’s subtle spice is spritzed into another dimension with a twist of lime and sprinkle coriander it really is the perfect summer supper! So what are you waiting for? Give it a whirl….

Ingredients:

  • 2 x chicken breasts
  • 2 tbsp. olive oil
  • 1 x tsp. of chilli powder
  • A handful of chopped coriander
  • 1 x tsp. of garam masala
  • 1 tsp. dried coriander
  • 1 tsp. dried thyme
  • A shake of salt and pepper
  • 3 inches of chopped cucumber
  • 1 x chopped tomato
  • 1 can of pre-cooked chickpeas, washed
  • 1/2 a red onion, finely chopped
  • juice of 1/2 a lime
  • 1 x tsp. chat masala

Step 1:

In a small bowl add the olive oil, turmeric, salt, pepper, garam masala, chilli powder, thyme and dried coriander and stir well to made a golden marinade. Add the chicken to a larger bowl and pour the marinade over the top ensuring it is covered evenly. leave for a few minutes to allow the spices to infuse.

Step 2:

Open, rinse and drain the chickpeas and place in a bowl. Add all of the chopped cucumber, onion and tomato. Add a handful of chopped coriander and squeeze the juice of half a lime. Add a shake of salt and pepper and sprinkle with the chat masala. Stir well and you are ready to serve. DELICIOUS!

Step 3:

In a medium hot pan, add the marinated chicken and cook until golden for about 5 minutes. Once cooked, remove from the pan and allow to rest for a couple of minutes. Add to a clean plate, the salad mixture, heaping it in the middle of the place. Slice the chicken and elegantly place over your salad. If you like, you can use some of the juices from the pan as a simple dressing. Add a sprinkle of cress and serve!!!
