Yes you heard me! Malai Tikka Kebabs, a delectable delight of delicate spices and gentle heat smooshed together with cool creamy yoghurt and tangy cheese. As one of my all-time favourites it makes me a little sad that I have never been able to find them back here in the UK. Not to worry though my friends…to the Kitchen! Everything you need is right here and it’s so easy you’ll be a bonafide kebab King / Queen in no time!
All you need are the following:
- 1 x Grill (Gas or Electric)
- 4 – 6 metal kebab skewers
- 8 x boneless chicken leg pieces (diced into chunks)
- 1 x lemon
- 1 x lime
- 2 tbsp. ginger paste
- 2 tbsp. garlic paste
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. hot chilli powder
- ½ tsp. garam masala
- 1 x heaped tbsp. full fat yoghurt
- 1 x handful of grated cheese (I tend to use mild cheddar)
Place your chicken in a mixing bowl. To the chicken add 1 tbsp. of garlic and ginger paste respectively. Add salt, pepper, chilli powder and the juice of half a lemon. Mix well (with your hand is best), cover with Clingfilm and place to one side and marinate for about 20mins.
After the initial marinade, add the remaining garlic and ginger paste, the juice of the remaining half of the lemon, garam masala and mix well. Then add the yoghurt and cheese. I recommend seasoning again at this stage so add another sprinkle of salt and pepper. Mix thoroughly with your hands.
Take your kebab skewers and gently place the thickly marinated chicken onto each skewer. Place under a medium to high heat grill and cook for around 7 – 10 minutes on each side depending on how thick and how tightly packed they are. They should be gently charred (not burnt) to give the appearance of being cooked in a tandoor and a smoky taste to the cheese.
There you have it! An amazing kebab that is easy to make and completely scrummy! Squeeze with a little lime to really ignite the flavours and serve with a naan and simple onion salad. Delicious!
